Time:

Total: at least 3 hours, perhaps overnight
Prep: 15 minutes
Cook: 3-4 hours, or overnight if preferred

Ingredients:

32 oz. package (pre-cooked, frozen) Italian Meatballs
15 oz can pineapple chunks (reserve juice)
1 large green pepper, diced
1 cup brown sugar
2 Tbsp cornstarch
2/3 cup apple vinegar
2 Tbsp soy sauce

Preparation:

Place meatballs in crockpot with green peppers and the drained pineapple chunks on the top.  Make the sauce by mixing, in a bowl:

Reserved pineapple juice
Brown sugar
Cornstarch
Apple vinegar
Soy sauce

Cooking:

Pour sauce over meatball mixture.
Cook on low for 3-4 hours or until heated thoroughly.

Note: Michele usually cooks the mixture overnight on low.
